The commonly held definition of a Christmas cake in the UK is of a rich fruit cake made or consumed at the end of the year. Within this definition there are literally hundreds of variations, everything from the iced Dundee cake to the German stollen cake. There are recipes using whiskey and brandy, nuts, mincemeat, marzipan and many other festive items.
Preparation time: 15 Minutes
Cooking time: 3 to 6 Hours
300g brown sugar
This Christmas Cake can be made in 2 sizes, the full amount of the ingredients will make (approximately) an 9 inch cake while half the ingredients will make an 7 - 8 inch cake, you have to make the necessary time adjustment which is 6 hours 15 minutes for the 9 inch and 3 hours 45 minutes for the 8 inch cake, both the cakes are cooked at gas mark 1 or 75°C.
NB: make sure you note the time for cooking the smaller size cake.
