Christmas Cake - Fruit Cake With Brandy

3 to 6 Hours

This recipe can be made in 2 sizes, the full amount of the ingredients will make approximately an 9 inch cake while half the ingredients will make an 8 inch cake, you have to make the necessary time adjustment which is 6 hours 15 minutes for the 9 inch and 3 hours 45 minutes for the 8 inch cake, both the cakes are cooked at gas mark 1 or 75 degrees centigrade

Ingredients: Serves 4-6
300g brown sugar           
6 eggs                                
450g sultanas                         
100g raisins                         
200g glazed cherries             
1/2 teaspoonful mixed spice   
2 tablespoons of dark treacle
300g butter
450g flour
450g currants
15g mixed peel
200g chopped almonds
1 glass brandy (optional)

Cooking Instructions:

1. Cream the butter and brown sugar together add the eggs one at the time until the mixture is fairly stiff. 

2. Add the flour, mixed fruit, almonds, mixed peel, brandy and dark treacle mix well, if you find the mixture is very heavy add a tablespoonful of warm water but only if you feel the mixture is too dry.

3. Line the cake tin well with greaseproof paper and bake in the middle of the oven.

4. Bake for 6 hours 15 minutes for the 9 inch and 3 hours 45 minutes for the 8 inch cake, Both the cakes are cooked at gas mark 1 or 75 degrees centigrade.

NB: make sure you note the time for cooking the smaller size cake.
