Cookies are basically biscuits, try to ensure the additions (nuts, chocolate or whatever) don't swamp the taste of the cookie. The following recipe is a good basic foundation and you can substitute whatever you want if you don't wish to use nuts.
Biscuit Recipe Ingredients: Serves 5-10
150g butter
100g soft brown sugar
200g plain flour
5ml tsp salt
50g nuts chopped almonds or walnuts
Cooking Instructions:
- Cream the butter and sugar together until it's light and creamy, add the flour and salt, mix well to form into a dough. You shouldn't need to use any liquid but if you do, just a teaspoonful at a time of tepid water.
- Place the dough onto a floured board, shape into a 10inch or 25cm roll, cut a large piece of tinfoil and sprinkle with the finely chopped nuts.
- Roll the dough in the nuts until you have coated all the dough well, wrap the dough in tinfoil and place in the fridge to firm up.
- When firm cut the dough into even pieces, place the cookies on two baking trays and cook in a preheated oven for 20 minutes at 160°C on the middle and top shelves, changing the trays after ten minutes.
