I've tried several of the Yourcounty recipes with mixed success but wanted to mention that the Christmas Red Cabbage was great both on Christmas day and beyond. Can I recommend Thane Chicken to you? We call it Creamy Chicken but in keeping with your Kentish Theme I've given it a 'proper' name which reflects where this dish originates.

Takes 30 minutes to prepare, an hour to cook and serves four.

Ingredients: Serves 4

100g of butter
4 medium sized chicken breasts or any suitable chicken pieces cut into squares
4 medium sized potatoes peeled and cut into squares
5 medium sized leeks chopped
1 pint (600ml) of chicken stock
150ml double cream
1 tbsp of tomato puree
2 tsp of freshly grated root ginger
1 tsp Cayenne pepper
2 tsp of fresh thyme

Cooking Instructions:

  1. Use a heavy bottom pan with a lid, it needs to be large enough to take all the ingredients, warm over a moderate heat and gently melt the butter.
  2. Add the chicken, cook for five minutes.
  3. Add the leeks, cook under a moderate heat stirring continually for five minutes.
  4. Add the cubed potatoes and half the thyme, the ginger, Cayenne pepper and puree, stir all the ingredients together.
  5. ently introduce the chicken stock and simmer for half an hour without a lid but keep the dish just off the boil, allow the liquid to reduce then cover for the final twenty minutes of cooking.
  6. Reduce the heat, add the cream and stir well, add the rest of the thyme and serve.
  7. Accompany with steamed or gently boiled marrow.
