Traditionally served as a summer soup, watercress seems to be once again growing in popularity; perhaps due to its widely acclaimed health properties. I have heard about a local watercress and pea dish but haven't seen a recipe for this, can you help?
The aim of our recipe pages is to highlight both new and traditional recipes that are accessible to cooks without huge experience or cooking resources. Watercress Soup Prep: 15 Minutes
Watercress Soup Cooking Time: 20 Minutes
This is a simply and easy soup to make, works well as a cold lunch or warm supper.
Ingredients: Serves 4
200g of watercress
50ml plain flour
300ml vegetable stock
90ml creme fraiche
60g pine nuts
